FIERCELY FAST FRENCH TOAST

INGREDIENTS

  • 2 eggs
  • sea salt and freshly ground black pepper, to taste           
  • 2 slices Bitchin’ Beer Bread, thick-sliced 
  • 1 ripe tomato, halved
  • 1 large handful  greens of choice (e.g. spinach, kale, collards)
  • 1 tsp extra virgin olive oil

INSTRUCTIONS

1.      Place eggs in a medium-sized wide bowl with a good crack of salt and pepper egg in a wide bowl with a bit of salt and pepper and whisk until frothy.

2.     Dredge both slices of bread on both sides into the egg and leave in a bowl to continue to soak while you organise the other steps.

3.     Place a large non-stick frying pan over medium heat. Add oil and brush over the bottom of the pan using a pastry brush.

4.     Lightly season your tomatoes and place cut side down on edges of the pan. It should sizzle.

5.     Place egg-soaked slices of bread onto another section of the pan.

6.     Fry until undersides of bread are golden (approx. 2 minutes) and then flip both bread and tomatoes.

7.     Fry for another 30 seconds or so, or until golden all over. Remove from pan and place on a serving plate.

8.     Next, throw in your green and lightly toss them around the pan until just wilted.

9.     Serve cooked tomato, wilted greens and French toast straight from the pan.

VARIATIONS

CANADIAN FRENCH TOAST

Of course, you can have a sweet French toast too! Just proceed as per recipe but omit the tomato and greens and enjoy your French toast straight from the pan with a drizzle of maple syrup and some fresh berries.
